Cheesy Italian Baked Chicken

I don't think I'll always be able to post daily on here but I've been on a roll with some pretty good meals lately & today was another one so I thought I'd share. It's not too much work & it's about 200 calories a serving, pair that with a couple of veggies & you have a filling low-cal meal.


Cheesy Italian Baked Chicken
4 chicken breasts cut lengthwise
3/4 cup Italian seasoned panko
1/4 cup Parmesan cheese
3/4 cup finely shredded Colby Jack cheese
1/4 cup milk
1 egg

In one bowl slightly beat the egg in milk. In another bowl combine the panko, Parmesan & Colby Jack. Dip each breast in the milk & egg mixture, then roll in the cheese panko mixture. Place in a slightly greased 13X9 pan. Bake for 30 min.

Garlic Shrimp with Asparagus

I am a Pinterest addict, if it wasn't for that site, I'd have never found some of the most amazing recipes & ideas. Tonight was one of them! This recipe was so good & really easy too! The only changes I made was to use fresh mushrooms instead of peas because not everyone in my family is a fan & I left out the dill because I've just never cared for it. Other than that I left it the same & served it over a little brown rice. It was scrumptious, just click on the title & it will take you to the recipe.

Roast Beef Taco Soup

My husband and I are working on making our daily diets healthier. I am constantly on the lookout for recipes for new meal ideas. I like to cook but I hate thinking of what to cook and when I ask my family what they would like to eat I get the same answer almost every time....food. Really? No kidding...

Windell (my sweet hubby) and I are also using the Lose It  app to keep track of our calorie intake and exercise. It's very user friendly and it allows you to create recipes so you can figure the calories in your favorite meals. It really makes you aware of what you are eating and the size of your portions. If these things are important to you I highly recommend it.

Today's recipe is simple, quick, low-cal & most importantly YUMMY! 


Roast Beef Taco Soup


10 ounces of leftover roast beef
1 can of Rotel (I used mild but you can use original or hot if you like it spicy)
1 lg can of chili beans (I used bush's in mild sauce)
1 can of whole kernel corn
1/2 pkg of dry ranch dressing mix
1/2 pkg of chili seasoning (I like Williams Original)
A few shakes of dried minced onion
Add water to the consistency you like, mine was thicker like chili would be.

Heat through & serve with shredded cheese. My family also likes to eat this with Fritos or tortilla chips. Makes approx 10 cups.

Calories 140 per cup of just the soup

I have made this in the past with ground beef or ground venison as well. I hope you enjoy it as much as we did today!

Hello and welcome to my very first blog! This is something that I've been thinking about doing for awhile and today I decided to make it happen. So first a little bit about me. I've lived in the South (Arkansas to be exact) since I was 5 years old and even though I wasn't born here, I consider myself to be a "Southern Girl". I became a farm girl almost 3 years ago when I met and married my husband who has always lived on a farm. It's been quite an adventure but I truly love every minute of it. We are in the very very early planning stages of building our dream log cabin on our farm land. We still have a lot of discussion of placement and design to do but we hope to see it become a reality in the next couple of years. Together we have 5 children, I have 2 girls ages 14 & 20 and he has 2 girls and a boy ages 25, 21 & 19. I am a Kindergarten teacher and have been for 17 years. I love to read, craft & cook and I hope to share a little about all of that with you. Enjoy!
